Around these parts, a ripe avocado is usually smashed into a piece of toast, waiting to hug a yolky poached egg, salt and a few cranks of black pepper to fulfill it’s creamy destiny. This time, the two avocados sitting on the counter were facing an entirely different fate. A chocolatey good one.

This recipe for a healthier version of chocolate pudding is almost embarrassing since it’s really just a mashup of a few simple ingredients. No cooking, no delicate dance of hot egg yolks and cream. No. This recipe calls for exactly 5 items and a quick spin in the food processor to smooth things out and that’s it.

Just pop in the fridge for at least and hour and dig in.

Chocolate Avocado Pudding 


2 large avocados
1/2 cup unsweetened cocoa powder
1/2 cup brown sugar
1/3 cup coconut milk
2 teaspoons vanilla extract


Combine all the ingredients in a food processor and blend until smooth. Chill for at least 30 minutes.
